Old Tradition.

One of the most popular ways of cooking a leisurely tasty meal in South Africa is an all time favourite amongst thousands of people in our beautiful country. The Americans and Aussies call it a "barbeque."
We simply call it a braai (rhymes with buy) which is cooking meat, fish, chicken or veggies over an open fire on a grill rack of sorts. You can even toast sarmies with a suitable filling of choice. Make sure the bread is buttered on the outside so that it doesn't stick to the grill. After you've started the fire, it needs to burn until the glowing coals are left, otherwise everything will be burnt to a cinder.

Meat of choice could be anything you fancy such as mutton ribs or chops, beef steak, sausages, chicken, or a firm South African delicacy called "boerewors. It's made from a mixture of quality meat and could include beef, mutton, and pork. You get pork free versions as well which is halaal. The fresh meat is ground along with spices such as coriander, clove, nutmeg and  a variety of other spices, salt and pepper and then stuffed into an edible casing. It resembles a never ending sausage coil wich tastes best when cooked on the fire. You buy as much as you need but it freezes well too if you want to buy in bulk.

You have to wait until the hot flames have died down and the coals must  not be too hot or you might end up with unedible cremated outside and raw inside! Chicken especially needs to be done correctly as half cooked or raw chicken can cause a serious food poisoning. Along with your choice of braai-ed food the possibilies of food you can serve with it are endless. Potato dishes, salads and rolls or another South African favourite, pap and gravy. Pap is a porridge cooked from mealie meal and served with a gravy of choice. Guess what where doing for supper! No pap tonight, but sarmies with a cheese, onion and tomato filling.

Your fire needs to be the right temperature and the flames must have died down leaving glowing coals by the time you put the meat on the grill.




A Caprese salad makes a simple but great accompaniment to your braai.
